Carrot Salad with Goat Cheese Dressing




4 ounces LaClare Original Goat Cheese

4 tablespoons water

1 tablespoon mayonnaise

1 tablespoon white wine vinegar

1 tablespoon olive oil

1⁄2 teaspoon kosher salt

1/4 teaspoon coarsely ground black pepper


4 tablespoons chopped cilantro
4 carrots (12 ounces), peeled and shredded (3 1/2 cups)

1 apple, cut into 1/4-inch sticks
6 ounces LaClare Goat Mozzarella, cut into 1/4-inch sticks

Crusty French bread (optional)

Lettuce leaves (optional)


1. Combine the dressing ingredients in a blender and puree until smooth.

2. Add the carrots, apples, and Mozzarella to a bowl and pour in dressing. Mix gently until well combined

3. Cover and refrigerate for a few hours to soften the carrots slightly.

4. Serve the salad with crusty bread or spoon it onto lettuce leaves.
