Artisan Goat Milk Creamery

Grilled Chandoka & Bacon


8 slices center-cut bacon
8 slices thick sourdough bread
2 tbsp unsalted butter
2 red tomatoes, sliced 1/4 inch
8 oz LaClare Family Creamery Chandoka


1. Place the bacon in a large skillet or griddle and cook until golden brown and crisp. Remove to a paper towel-lined plate. Break each piece into fourths and set aside.

2. Heat a cast iron griddle or cast iron pan over medium heat.

3. Spread butter on 1 side of each slice of bread. Layer 2 of the slices of the bread with 2 tomato slices, 2 slices Chandoka, and 4 slices of bacon and sea- son with salt and freshly ground black pepper.

4. Place the remaining bread slices on top, butter side up and cook on the grid- dle until golden brown on both sides and the Chandoka has melted
